Harvest Pork Roast

A pork roast with potatoes and apples.

  • 2 1/2 lbs. boneless pork loin roast
  • 2 apples (peeled and sliced)
  • 1 bulb fennel (sliced)
  • 1 cup apple cider
  • 1 tsp. thyme
  • 2 lbs. sweet potatoes (peeled and cut into large chunks)
  • 1 package Crock-Pot® Beef Stroganoff Mix


Arrange potatoes, apples and fennel in slow cooker. Place pork roast on top of vegetables. Combine beef stroganoff mix with apple cider and thyme and pour over pork and vegetables. Cover and cook on low 8 to 10 hours or high 4 to 6 hours. Thicken gravy if desired: Remove pork and vegetables from slow cooker. Combine 2 tablespoons flour with 1/2 cup water and pour into slow cooker stirring constantly. Cover and cook on high 15 minutes or until thickened, stirring frequently. Note: For firmer apples, add to slow cooker for the last 2 hours of cook time.
